Okay, so my only regret with this recipe is that I could not find a red bell pepper in my area for the life of me. I don't know if there was some huge shortage when I made this, but I now see them everywhere in the store. Of course :(
But using a red bell pepper would have given this a little color. Drab color aside, this meal is super easy and delicious! You could even toss this into a low calorie wrap and enjoy it that way if you prefer!
I did use a pre-seasoned rice by Vigo. I highly recommend trying to find a bag. It was only $1.44 at Walmart and it has such an amazing flavor! If you can't find it locally, you should be able to order it online at Walmart. If you use regular rice, you'll just have to season it before popping it into the oven.
If you try this one, be sure to let me know how you like it!

Absolutely
What size dish
Just came to say this was amazing! It will be in the permanent rotation now. 5/5 stars!
I had the same issue. I’ll cover it better next time , if there’s no steam generated the rice won’t cook through
I didn’t find the brand at my Walmart but came upon it at my dollar general could try there
That’s what I could find and it worked for me!
10/10 this is my favorite meal prep so far
I got regular fajita seasoning not chicken fajita seasoning. Will this be okay?
Also I made it tonight and the chicken came out dry and the rice was a little mushy. Do you think I cut the chicken in too small of pieces? Actually I lied. As I'm portioning out, the middle rice is actually not cooked but the outer is mushy
I actually had never heard of the rice and actually found it at the dollar tree! Didn't look anywhere else though haha!
I tried to make this one. Good flavor but the rice wouldn’t cook

That's usually a connection issue. Are you doing this on cell signal or wifi?
Zach Coen
I'm sure it will :)
I can only find Mahatma seasoned yellow rice near me.. will this work?
Soooo easy to make. This is excellent!
Hi, when I tap on PDF the recipe does not appear. Please advise thx
Could I just swap the rice for cauliflower rice?
This was delicious! Yellow rice is my FAVORITE 🤤
