Now that we are officially in Spring and the weather will be getting warmer, I think soup season is now behind us.
With that being said, I wanted to sneak one more in. This recipe is a must if you love a good stew with lots of flavor.
As many of you know, my wife is Puerto Rican and quite a few people in her family love to cook. The first time I tasted pollo guisado, I knew it would be something I needed to learn to make myself. So here we are :)
Hopefully this is yet another example of how you can still eat comfort foods while sticking to a balanced diet!

Made it in the crockpot after browning the chicken. My house smelled amazing and it was sooo good. Made my own Sofrito. It’s a keeper!!
Sauted the chicken ,then deglazed and sauteed onion and garlic in the instapot. Pressure cooked for 20 minutes on high pressure and released....easy peasy. Definitely on my rotation!
I have no access to Sofrito. Would it be better if I omit it or sub with more tomato sauce and spices?

It’s much harder to find here in SoCal
Any supermarket. Usually in the international aisle. Here in Florida I can find sofrito at Publix, Walmart, even target.
Please tell me where to find Sofrito. And is it the regular Saźon?
