Okay....full disclosure, I am a coconut fanatic! I love pretty much anything coconut, so this is definitely a favorite of mine!
This is another overnight oats that uses a specific flavor of Greek yogurt. But again, this is an easy swap if you can't find a coconut flavored yogurt. Simply use a serving of your favorite vanilla Greek yogurt instead.
As for the coconut creamer used, if you can't find it or don't want to buy it just for this, adding a tiny bit of coconut extract will help give you a nice coconut flavor to the oats. You may just need to add a sweetener of choice to fit your preference.
Hopefully all my fellow coconut lovers enjoys this recipe!

The best overnight oats I've ever eaten.
For anyone reading this and also wanting to know, I ended up entirely leaving out the creamer and using 1/4 tsp of coconut extract and it’s great! You can add a little more milk or something depending on the texture you prefer - I like it thicker.
Zach, do you have any suggestions on the amounts to use for the creamer substitute? Probably the extract since the syrup is pricey. 😁
