Sooooo many of you have requested a Mexican street corn (or elote) recipe. So let me just apologize for taking so long to come out with one. I really do try to get around to any and all requests whenever possible :)
But, if it's any consolation, I really think this one was worth the wait!

So good! Used everything but the elote seasoning and tajin, and used Mexican corn mixed with corn salsa. Made a rice/cauliflower rice mix to give some extra volume/fiber to go with it.

This is absolutely going in my rotation now. Added a can of drained and washed black beans and subbed plain Greek yogurt for the sour cream.
