Regretably, It seems that I will need to pause some old genshin proyects like the shenhe one while I'm saving what i can... 1.5 TB of data,

Damn idk what to say. It feels like sometimes like once a pc has problems if you try to fix it by swapping certain things out it all will just keep breaking. From the screen shots youve shared on discord it seems something’s seriously been wrong with it.

I also used my laptop m.2 to test the ssd and it didn't help at all its the same slow read/write speed

it might be possible the SSD port on the motherboard itself is fried not the SSD. if you have a spare motherboard laying around you could test to see if it is the SSD or motherboard that's fried.
