Cherry Flavour Formula Sheet

If you like cherry flavours, this is a good one, and if you want an interesting twist, and like tonic water, simply add 60 mL (2 oz) of the syrup to 300 mL (10 oz) of tonic water instead of plain soda water.
This is the start of the Dr Pepper journey, but to understand why cherry soda has an almond-like flavour, we need to look at the history, and this video will give you everything you need to know.

Ya, I didn't even know about the US strictness about benzaldehyde before I made this recipe. I'm in Canada, so things are much easier. If you are doing this for business purposes (even as a bartender) you could use that to prove legitimate use reasons.

I'm having a hard time getting benzaldehyde in the USA without it being 50% diluted, any way to get around this without risking ordering internationally and having it seized?

Wintergreen (methyl salicylate) is much stronger than either of the benzoates, and would not be subtle. You could play with it, but you might end up with a Cherry Root Beer type flavour, but that sounds pretty good. Sometimes experimentation leads to great things.

A little curious, you mentioned that ethyl benzoate could be a substitute for amyl benzoate, and then in the Dr. Pepper you mention ethyl benzoate smelling like wintergreen/root beer. Could you substitute wintergreen EO or essence in here for the cherry oil? Or might that shift things away from the intended flavour/taste of cherry oil?
