The 23 Flavours of Dr Pepper

In this video, I just compare the 23 flavour ingredients to those speculated online about what Dr Pepper tastes like.
Next week will be the formulation and tasting video. And the previous video on Cherry Soda has aged long enough that it has developed a distinct Dr Pepper aroma, so I'm hopeful this more complex recipe will be even closer.

Yes, unfortunately I had to order from 5 different suppliers to get all the ingredients, though you can probably get them at 2 or 3. And this is one of those flavours where you can't really identify each compound, but when they come together they create something unique that tastes like Dr Pepper.

Hello, regarding the esters ,it seems that we do not have all ingredients at one supplier and have to look for them .there is one thing I do not understand: I remember from your previous videos ,you mention that a limited number of flavours is better.but in Dr Pepper,so many .will each note from so many flavours be able to show their presence.

Thanks and you hit on a really important point, and something I find really frustrating. The vast majority of suppliers have no idea what is safe for food use. I have been trying to set up an account with Sigma, which clearly indicates on over 1000 compounds that are certified food grade, and they have a flavour division, but they deny my account because: "Product (s) ordered is (are) intended to be used in laboratory research and development applications only and not for food/drink use." Now this is Sigma, and I am embarrassed for them as this is right on their website: "Our certified food-grade, IFRA (International Fragrance Association), natural, kosher, and halal ingredients" https://artofdr.ink/sigma But this is to make the point that the low-level people will always default to the safety option: "it is better to deny than approve when I don't know." And as the only person publicly sharing and educating on this topic, it is quite the mountain to climb to get everyone on the same page and to understand that if it is on the FDA GRAS, and every compound on the Cherry Flavour has the FEMA number and is GRAS, it is allowed to be used in food and drink. Now, one caveat you may be facing in the US is that benzaldehyde is considered a drug precursor, so it is restricted, but as a business in the restricted drug business, it would be hilariously ironic if you couldn't buy benzaldehyde due to a controlled chemical schedule. Please let me know if that is the case because we can fix that.

I too enjoy your work. I work for a medical cannabis dispensary and enjoy using your ideas to try flavors to offer our patients. Your recent cherry formula was a no go as some of the ingredients were listed as non edible by some suppliers.
