Don't worry about it too much. You can write on Youtube community tab a simple "no video today." So at least those who wait for a Monday upload can get to know. There's no need to give any long form explanation. Also if 3 fixed uploads a week is too much, I agree with toy, stick to one day if its a busy week. Or alternatively make the save videos shorter (10mins) and simpler with classic triggers if you think shooting and editing takes too much time :)
