Calling him "Demi" hahaha cute. Also, the moment I saw the after credit scene, i instantly remember what was going to happend and how it was when I watched that weekly, what a cliffhanger that was at the time.

As time goes you will see that Ainz becoming more and more into his character (evil overlord) and his true voice (japanese guy) becoming much rarer to be heard. Like his personality as human being is slowly eroded

When demiurge talk about the sheep it's about his happy farm basically the problem is that nazarick need to make scroll and to make scroll you need to skin an animal. To be the most efficient demiurge decided to skin the sheep then heal them problem if you do that the skin disappear so you skin the sheep then use the skin to make a scroll and when you heal the sheep the scroll don't disappear because it's no longer the skin of this sheep but a magic scroll. And you repeat that indefinitely.

In season 1 when we first met the guardians Ainz summoned all but 2 of them. Here you got to meet the last 2 guardians, victim is a biblically accurate angel, and the term victim is from the Latin word for sacrifice so they get sacrificed for their skills. Then we saw gargantua the giant that threw the rock. This is now all the floor guardians.

lol yes I did remember Albedo on his bed, I thought that must be her scent 😂 he has no idea what she's been up to lol

You probably not notices but Ainz was using same pillow that Albedo was rubbing her scents. Thats why he smell flowers.
