Those maids who serve Ainz aren't humans, they are homonculi. Basically, artificial creatures made by an alchemist to look like humans. They eat a really large amount of food to keep their artificial bodies going. If you've seen Fate you will see homonculi in that too.

The conversation about the house arrest was about something that happened off screen. Basically, Pestonya (dog maid) and Nigredo (who shows up in a few episodes) spared the lives of infants that were taken when they kidnapped all those people from the kingdom in season 1. While most of the NPC's agreedthis was heresey Albedo is angry more personally because the of Nigredo being involved, you'll probably get why when you get introduced.

I kinda wish they put in two things. The first thing is when he was talking to Pandora actor he told him he would actually sacrifice Pandora’s actor to save any floor guardian and he was fine with it. The second thing is. before he started walking around in town, he was making the angels that were following him and he was talking to the maid and eventually he asked how cleaning was and the maid said we clean every room but Albedo because she said no one‘s allowed to clean in there but her, personally that would’ve made it better.
