Laylani seems to be experiencing more thirst than usual.
Although she had her usual pack, it wasn't enough to satisfy her, and she attempted to take a bite out of Molly...likely that she wasn't fully aware of what she was doing.
In a state of shock, she panicked and transformed into a bat, catching everyone, including herself, off guard, and flew away.

I imagine Laylani's vampiric inner dioluge went something like this; "who should I eat? Molly = she's kind of mean, but a normal human. Lithana = tiefling that eats souls, nope not gonna touch that one. Angelia = smells like she ate a fish head. Molly it is!"
