As someone who has done a course on "Ringen", wich is basically medieval eurpean close cuarter combat, that is deffinitively not how to effectively counter a knife attack, nor should you ever even engaje on a knife fight, but if for whatever random scenario you end up having to defend yourself from a knife, just kick the atacker on the crotch and run away, and leave the bullshido and the tactics for sports and the like
