Because they're not supposed to exist. They were invented for FGO, keep in mind the Visual Novel is very old. The only other class back then was Avenger. And Stay Night is an adaptation of the VN. (PS : I know many of the Extra weren't invented by FGO, it was to simplify)

It's sad that not most of the "Extra Classes" are introduced in the anime part, Avengers, Rulers and Moon Cancers are Extra I. Alter Ego, Foreigners and Pretenders are Extra II and there's so many ways these can be shown in the anime yet they never do it
