I haven't read the light novels personally. But I have heard that Subaru definitely has had moments throughout the events of season 1 where he thinks about his parents and missing them. Especially when he's trying to cope with the horrible traumatic experiences he goes through. Basically, its a fault of the anime that they pretty much cut all of those small minor moments from season 1 for some reason. Hence why its so odd that his parents or anything regarding his original world has NEVER been brought up until now, and yet the flashbacks to his past shows that he had a good relationship with them.

The Creator of Re:zero Tappei Nagatsukhad confirmed that Subaru's dad Kenichi and his mom Naoko are still searching for him in their world. They have reported to the police about the situation but couldn't find any leads. Naoko is slowly breaking down, while Kenichi is still trying his best to cheer her up .

Like the comment before me said, you guys have to watch the frozen bonds movie/ova for 2nd half of re:zero S2 (it's important for understanding some stuff in later half of season 2 and movie provides lots of context) , you can watch it after ep13 of season 2 or ep38 (according to crunchyroll hopefully i got the numbering right)

You guys HAVE to watch the Re:Zero movie called "Frozen Bonds" after episode 13 for this season. This season of Re:Zero will heavily focus on a certain character throughout the eternity of S2 and the movie adds more context & fleshes out said character even more to better understand and appreciate the character in this season. The movie itself is only 1 hour & 16 minutes so its not that long.
