I didn't know if you were aware of this. I actually never drink any alcohol at all, but the tasting of wine (before the waiter fills your glass) is not actually about the taste exactly, it is just testing to see if it is corked (screw capped wine can be corked too, just an fyi). So Fisk wasn't tasting the wine for her, he was just tasting in case it was corked. This is pretty common practice in most restaurants.
