Echidna is interesting. I only know about the spiny egg laying version here in Australia! Was it named after a Greek myth?

Hold on, you forgot about one of the greatest badass monsters in Greek myth: the hecatoncheires. If you got hydras and harpies you gotta get these bad boys on here. (Especially if you are dangling the Greek kaiju Typhon as an option)
