The conversations between Arya and Tywin are so interesting because under other circumstances you can tell that they could have had a good relationship he respects her in his own twisted way and I think although she would not want to admit it she sees the wisdom in some of his words that she's listening in. My lord vs m'lord I think it's more of a sense of a low-born person would speak in more slang whereas she's speaking like someone well-educated

It’s not more that they can’t say “my Lord” it’s that they weren’t taught it. You notice how maester Lewin and septa were always teaching the kids? They were taught manners thus saying it properly -“My Lord”. However, low born/commoners don’t get lessons or get taught things like high borns do. I think they know it’s respectful to say my lord but with their lower knowledge/literacy, they say “ma lord”. If that makes sense
