I know you said it half jokingly but having the dragons take out the wights then having Sam poke the night king with dragon glass and then sit on the iron throne......I can get with that :D

No one is happy that Cersei is queen but considering Jaime forfeited his inheritance, Cersei is 100% the legit heir to the throne if you're going by Robert Baratheon's line.

You guessed right, Varys came back with the Dornish and Tyrell fleets to take the Dothraki (and their horses) and the Unsullied to Westeros. You can spot the Martell sigil on the left flank of the fleet and the Tyrell sigil on the right flank (on triangular green sails).

GRRM knows his shakespearian dramas well. The Frey pie is a nod to Titus Andronicus. Also, remember the Rat Cook story Bran told in season 3? I believe Arya was totally spying on Jaime and assessing whether he deserved to die or not.

Varys was on the ship because the fleet had to sail past Sunspear (Dornish capital) on the way to Dragonstone from Meereen. That’s where they picked up Varys, and the Martell & Tyrell ships.
