And it wasn't just her brother who Nezuko was protecting and getting angry for. It was all the innocent people who got killed and whose loved ones got killed. That carnage from last episode, she must've heard it and gotten out of her box (or maybe the box broke even), and she saw all those dead ppl, that set her off. The scene reminded her of her family. And seeing Daki about to kill Tanjiro sent her over the edge.
